1. Chicken Cordon Bleu Meatballs
Lean, home ground chicken and turkey ham meatballs with a Swiss cheese center served with baked stuffed potato and steamed vegetables.
2. Cola BBQ Glazed Kielbasa (Dairy, Garlic and Wheat Free)
Local sausage simmered in a sweet tangy glaze with herbs, spices, potatoes and summer peppers.
3. Greek Pot Roast and Spaghetti
(Special Order Dairy Free, Special Order Wheat Free)
My old mentor Chef Karousos made a dish like this so I had to make it too. A chunky, falling apart beef stew topped with marinated tomatoes served over spaghetti.
4. Roasted Vegetable Salad
(Dairy, Garlic and Wheat Free)
A cold or hot salad for the hot days of summer, with roasted peppers, carrots, tomatoes, broccoli, kale, baby potatoes, lentils and basmati rice tossed with a tangy lemon maple vinaigrette and a toasted coconut garnish.
5. Shrimp à la Veracruz (Dairy and Wheat Free)
Shrimp, capers, green olives, oregano and jalapenos punch up the sauce served over rice and black beans.
